Hydrabadi Biryani

Very tasty Vegitable Biryani, everyone will love it.

Ingredients :-
  • Basmathi rice-1 cup.
  • Fresh thick curds-1 cup.
  • Water-1 cup.
  • Mixed diced vegetables (potatoes, carrots, peas) - 2 cups.
  • Oil-2 1/2 tbsp.
  • Ginger-garlic paste-1 tsp.
  • Onions-2 cut lengthwise.
  • Peeled garlic-6 flakes.
  • Salt-as required. Lemon-1.
  • Finely cut mint leaves-1 1/2 tbsp.
  • Cut coriander leaves-1 tbsp.
  • Fry Cashewnuts-1 tbsp.
  • Small onions-7.
  • Green Chillies - 8
  • Ginger-1/2 inch piece.
  • Cinnamon-1 inch piece.
  • Cloves-2.
  • Cardamoms-2 in 2 tbsp oil & grind with a bunch of coriander leaves.
Preparation Method :
  1. Wash & soak rice for 10 mins.
  2. Drain water & fry for 2 mins in 1/2 tsp of ghee.
  3. Heat pressure cooker,
  4. add oil & fry garlic & onion pieces.
  5. Mix ginger garlic paste & diced vegetables.
  6. Fry till vegetables are tender.
  7. Add ground masala paste & fry till smell goes.
  8. Beat curds & add it along with 1 cup of water.
  9. When it starts boiling add rice & salt,
  10. cover lid & cook on a low flame.
  11. Keep the weight as soon as the lid is closed.
  12. Remove from fire after 2 whistles.
  13. Squeeze lemon juice & add cut mint leaves & coriander leaves.
  14. Mix well & serve hot

Green Chilly Pickle

Spicy Yummy Green chilli pickle. Just have a try.

Ingredients :-
  • Short and fat green chillies - 2 cups
  • Pickle masala powder – 2-3 t. sp.
  • Oil – 1 cup
  • Vinegar - 1 cup
  • Brine – ½ cup
Preparation Method :
  1. Wet the masala powder with brine and vinegar.
  2. Slit the chillies and stuff them with the masala.
  3. Pack in a bottle.
  4. Warm the oil and pour over it.
  5. Add the rest of the vinegar and brine.
  6. Use after a week.

Thakkali Chutney

An Yummy dish.

Ingredients :-
  • Tomatoes - 3 medium sized
  • Channa dal - 2 tbs
  • Coconut scraped - 1 cup
  • Green chillies - 5
  • Salt - as per taste
  • Sugar - 1 tsp
Preparation Method :
  1. Fry channa dal using little oil, then fry tomatoes cut in to pieces.
  2. Now grind all the indredients together.
  3. For seasoning use mustard seeds and udid dal.
  4. It tastes best for dosa, idli, etc.

Kadumaanga Achar

Ingredients :-
  • Small pulimanga - 1kg
  • Ground Mustard seeds 100 gms
  • Chilli powder    250 gms
  • Salt
Preparation Method :
  1. Clean the mangoes and wipe it dry. Add salt and keep in a porcelain container for two weeks.
  2. After two weeks open and add chilli and mustard powder.
  3. This will stay for a year.

Parippu Vada

Vada made with Dals.

Ingredients :-
  • Black gram-1/2 cup
  • bengal gram-1/2 cup
  • red gram-1/2 cup
  • salt
  • curry leaves-few
  • onion-1 big(cut small)
  • green chilly-2(cut small)
  • ginger-1" piece cut small
  • chilly powder-1/2 tsp
  • turmeric powder- a pinch
  • oil
Preparation Method :
  1. Soak the gram in water for atleast 2 hrs.
  2. Grind these to make a thick paste.
  3. Do not add water when grinding.
  4. Now add onion,curry leaves,green chilly,ginger,chilly powder,turmeric powder and salt to this paste and mix well.
  5. Wet your hands and make balls of the paste and make patties.
  6. Deep fry in oil.

Banana Coconut Milk Pachady

Tasty recipe with banana and coconut.

Ingredients :-
  • Banana pieces - 1/2 cup
  • Grated coconut - 11/2 cup
  • Onion cut into small - 1/2 cup
  • Green chillies - 2
  • Fenugreek - 1/8 th tsp
  • Lime Juice - 21/2 tsp
  • Salt   
To Season :
  • Sliced shallots - 1 dsp
  •  Mustard - 1/2 tsp
  • Pepper corns - 4
  • Cummin - a pinch
  • (Broken) dry chilliies - 2
  • Ghee - 1 dsp  
Preparation Method :
  1. Cut bananas (the frying variety) after peeling the skin, into small cubes.
  2. Wash well in water and fry them crisp in 2 ozs of oil and keep it aside.
  3. Add the minced ginger, cut up green chillies, the onions, salt and 1 cup of 2nd milk from the coconut.
  4. When it boils sprinkle the fenugreek and cook.
  5. Add about 3/4 cup of first milk and the lime juice, simmer and remove from fire.
  6. Fry all the ingredients of the seasoning in ghee and mix it into the pachady. 

Jeera Peas Pulav

Jeera Peas Pulav - Tasty Rice Dish made of Peas and Cumin (Jeera).

Ingredients :-
  • Basmathi Rice - 1 cup
  • Ghee - 1 spoon
  • Jeera - 1/2 tea spoon
  • Onion - 1
  • Ginger and Garlic paste - 1/2 spoon
  • Peas - 1/2 cup
  • Water - 2 cups
  • Salt - according to taste
Preparation Method :
  1. Take the basmathi rice and soak it water for about 20 minutes and later strain it and set aside.
  2. Take kadai/wok. Put little ghee fry jeera, ginger garlic paste, onion till onion is done.
  3. Now add the peas and fry for few minutes.
  4. Now put the basmathi rice. Mix every thing with required quantity of salt and add the water.
  5. Simmer it and close with lid and set aside for about 15 minutes.
  6. When done you would get the nice aroma. Serve it with Raita, or any gravy vegetable.

Veg mezhukkuparatti

A colourful condiment for luncheon.

Ingredients :-
  • Lady's finger - 1/2 kg
  • potato - 3
  • carrot - 3
  • mustard seeds - 1 tsp
  • dry red chillies - 2
  • curry leaves - 1 sprig
  • green chillies (torn in half)- 4
  • asafoetida -  1 tsp
  • oil to taste
  • salt to taste
Preparation Method :
  1. Cut lady's finger, potato and carrot in strips.
  2. Add oil to the pan and heat it. Once heated, add the mustard seeds.
  3. When it splutters add the dry red chillies and curry leaves. Add green chillies, asafoetida and salt.
  4. Now add the cut vegetables to it and mix it well.
  5. Cover with a lit and set it at the lowest flame. Leave it for around 25 minutes.
  6. Once the vegetables get cooked, serve them.

Brinjal cutlet

An Yummy Cutlet made from Brinjal.

Ingredients:-
  • 3 - brinjals, preferably round variety
  • 100g - potato (boiled, peeled & mashed)
  • 1 - carrot, medium, grated fine
  • 1tsp - ginger & garlic
  • 4 - green chillies, chopped fine
  • 1/2tsp - red chilli powder
  • 1 - onion, medium, chopped fine
  • 1/2tsp - garam masala
  • A handful - boiled & roughly mashed peas
  • 1tbsp - peanuts, dry fried & roughly crushed
  • 1 pinch each - salt & haldi
  • 2 - egg whites
  • 1/4tsp - amchur (optional)
  • oil to deep fry
  • 100g - bread crumbs
  • 2tbsp - besan or flour
  • 1tbsp - chopped coriander leaves
Preparation Method :
  1. Make superficial cuts (1 or 2) on brinjals
  2. Smear a drop of oil & roast them on gas (if coal is available roast them on coal)
  3. Remove the outer layer & mash the brinjals, keep it aside
  4. Heat 1/2tbsp oil, fry onion, green chilli till they become soft
  5. Add garlic & ginger paste and fry till the raw smell goes
  6. Add grated carrot fry for 2 to 3 min
  7. Add potato mash, peas, brinjal mash, garam masala, haldi, salt, besan, peanuts & chopped coriander leaves & red chilli powder and mix thoroughly
  8. Remove from fire
  9. Cool the mix & make round cutlets
  10. Whisk white of eggs in a bowl, spread the bread crumbs in a plate
  11. Dip the cutlets in egg solution, roll them in crumbs & deep fry in oil till they are golden brown in colour
  12. Remove them on a paper napkin and serve with chutney or tangy sauce
  13. If you want to avoid egg, dip the cutlets in a thin batter of flour or besan before rolling in crumbs
  14. If you want to avoid deep frying, fry the cutlets in flat frying pan using less oil

Tomato Onion Raita

Tomato Onion Raita is used widely along with Biriyani and also Indian breads like Chappathi.

Ingredients :-
  • Tomato - 2
  • Onion - 2
  • Chillies - 2
  • Thick Curd - 1 cup
  • Salt - as required
Preparation Method :
  1. Cut tomatoes and onions into small slices.
  2. Cut green chillies into small pieces.
  3. Mix the curd into the vegetables along with salt and mix well..
  4. Allow it stand covered for 5 minutes.

Simple Vegetable Salad

Simple Vegetable Salad is a healthy salad good with any dish.

Ingredients :-
  1. Cucumber - 1
  2. Onion - 1
  3. Tomato - 1
  4. Salt - as required
  5. Lemon Juice - 2 tsp
Preparation Method :
  1. Peel the small cucumber and cut them round.
  2. Cut onions and tomatoes also in round shape.
  3. Mix the lemon juice and salt with the salad and mix well.

Mango Kichadi

Simple and Delicious Mango Kichadi for Onam celebrations.

Ingredients :-
  • Raw mango   1
  • Curd   ½ cup
  • Grated coconut   ½ cup
  • Cumin powder  ¼ teaspoon
  • Green chilly   4
  • Coconut oil   1 tablespoon
  • Mustard seed  ½ teaspoon
  • Dry red chilly  2
  • Salt     As required
  • Fenugreek powder  ¼ teaspoon
Preparation Method :
  1. Cut mango to small pieces. 
  2. Cook mango in water with salt as required. 
  3. Grind Ingredients 3 to fine paste. 
  4. Add this to cooked mango. 
  5. When it starts boiling, add curd and stir well.
  6. Splutter mustard seeds in coconut oil, add dry red chilly, curry leaves and fenugreek powder. 
  7. Pour it over the mango kichadi.

Cheera Aval Cutlet

Cheera Aval Cutlet - Healthy and tasty Cutlet recipe.

Ingredients :-
  • Cheera (Red/ Green) leaves chopped finely - 1 cup
  • Aval nanachathu ( soaked and mixed with little water) - 1/2 cup
  • Potatoes boiled and mashed - 2 nos
  • Onion chopped fine - 1 cup
  • Green Chilly chopped - 1 tsp
  • Ginger chopped - 1 tsp
  • Salt - to taste
  • Bread powdered
  • Oil
  • Egg beaten - 2
Preparation Method :
  1. Heat a little oil in a pan and fry onion, green chilly and ginger for some time.
  2. Then add the chopped cheera to this and saute for some more time and cool this mixture.
  3. Add the mashed potatoes and aval nanachathu to the onion mix and mix well.
  4. Make cutlets and dip the cutlets in beaten egg and bread powder.
  5. Heat oil in a pan and deep fry the cutlets.
  6. Serve hot.

Ingredients :-
  • Brinjal of medium size - 2
  • Onion - 1
  • Garlic- 4 cloves
  • Pepper-1/4 tsp
  • Curry leaves - few, chopped fine.
  • Chilli powder - 2 spoon
  • Ginger
  • Turmeric powder - 1/4 spoon
  • Salt to taste.
Preparation Method :

Ghee Rice

Tasty, Yummy and Delicious fodd with ghee. Very easy to cook.

Ingredients :-
  • Basmati Rice - 2 cups
  • Onion - 3-4 nos
  • Cinnamon - 4-5 pieces
  • cardamom - 4 nos
  • cloves - 6 nos
  • turmeric powder - 1/2 teaspoon
  • cashwenuts, raisins - for garnihing
  • butter/ghee - 50 gms
  • salt - to taste
  • water - 3 cups
Preparation Method :
  1. Wash and drain rice.
  2. Cut onion into thin pieces. In a pan, heat butter, add cloves, cinnamon and cardamom. Stir.
  3. Add onion and stir occassionally , add rice before the onion turns into brown color. Stir for 1 min.
  4. Mix turmeric powder to it.
  5. Put all these into a pressure cooker, add 3 cups of water,  salt.
  6. Put the cooker in medium flame.
  7. Two vistles are enough for rice to get cooked.
  8. garnish with fried cashewnuts, raisins. 

Bread Oothappam

Yummy bread snack.

Ingredients :-
  • Bread slice - 8 nos
  • Semolina(Rava) - 50 gm
  • Green chilly - 1 no
  • Curd(Thayiru) - 100 gm
  • Ginger - 1" piece
  • Salt - ½ tsp
  • Coriander (finely chopped)- For flavor
  • Soda - A pinch
  • Onion(big) - 1 no
  • Oil - 4-5 tbsp
Preparation Method :
  1. Mix together rava, curd, salt, soda, green chillies, ginger and chopped coriander and keep aside for 2-3 hours. The paste should not be too liquid or too thick.
  2. Add the finely chopped onions to the rava paste.
  3. Heat a tava. Keep 1 slice of bread on the tava. Now spread the mixture on the slice. Simmer the gas and turn it over. Make it crisp by using oil on both sides.
  4. Repeat the above procedure for all the breads. Serve hot with tomato ketchup and coriander chutney.
