Hydrabadi Biryani

Very tasty Vegitable Biryani, everyone will love it.

Ingredients :-
  • Basmathi rice-1 cup.
  • Fresh thick curds-1 cup.
  • Water-1 cup.
  • Mixed diced vegetables (potatoes, carrots, peas) - 2 cups.
  • Oil-2 1/2 tbsp.
  • Ginger-garlic paste-1 tsp.
  • Onions-2 cut lengthwise.
  • Peeled garlic-6 flakes.
  • Salt-as required. Lemon-1.
  • Finely cut mint leaves-1 1/2 tbsp.
  • Cut coriander leaves-1 tbsp.
  • Fry Cashewnuts-1 tbsp.
  • Small onions-7.
  • Green Chillies - 8
  • Ginger-1/2 inch piece.
  • Cinnamon-1 inch piece.
  • Cloves-2.
  • Cardamoms-2 in 2 tbsp oil & grind with a bunch of coriander leaves.
Preparation Method :
  1. Wash & soak rice for 10 mins.
  2. Drain water & fry for 2 mins in 1/2 tsp of ghee.
  3. Heat pressure cooker,
  4. add oil & fry garlic & onion pieces.
  5. Mix ginger garlic paste & diced vegetables.
  6. Fry till vegetables are tender.
  7. Add ground masala paste & fry till smell goes.
  8. Beat curds & add it along with 1 cup of water.
  9. When it starts boiling add rice & salt,
  10. cover lid & cook on a low flame.
  11. Keep the weight as soon as the lid is closed.
  12. Remove from fire after 2 whistles.
  13. Squeeze lemon juice & add cut mint leaves & coriander leaves.
  14. Mix well & serve hot

Green Chilly Pickle

Spicy Yummy Green chilli pickle. Just have a try.

Ingredients :-
  • Short and fat green chillies - 2 cups
  • Pickle masala powder – 2-3 t. sp.
  • Oil – 1 cup
  • Vinegar - 1 cup
  • Brine – ½ cup
Preparation Method :
  1. Wet the masala powder with brine and vinegar.
  2. Slit the chillies and stuff them with the masala.
  3. Pack in a bottle.
  4. Warm the oil and pour over it.
  5. Add the rest of the vinegar and brine.
  6. Use after a week.

Thakkali Chutney

An Yummy dish.

Ingredients :-
  • Tomatoes - 3 medium sized
  • Channa dal - 2 tbs
  • Coconut scraped - 1 cup
  • Green chillies - 5
  • Salt - as per taste
  • Sugar - 1 tsp
Preparation Method :
  1. Fry channa dal using little oil, then fry tomatoes cut in to pieces.
  2. Now grind all the indredients together.
  3. For seasoning use mustard seeds and udid dal.
  4. It tastes best for dosa, idli, etc.

Kadumaanga Achar

Ingredients :-
  • Small pulimanga - 1kg
  • Ground Mustard seeds 100 gms
  • Chilli powder    250 gms
  • Salt
Preparation Method :
  1. Clean the mangoes and wipe it dry. Add salt and keep in a porcelain container for two weeks.
  2. After two weeks open and add chilli and mustard powder.
  3. This will stay for a year.

Parippu Vada

Vada made with Dals.

Ingredients :-
  • Black gram-1/2 cup
  • bengal gram-1/2 cup
  • red gram-1/2 cup
  • salt
  • curry leaves-few
  • onion-1 big(cut small)
  • green chilly-2(cut small)
  • ginger-1" piece cut small
  • chilly powder-1/2 tsp
  • turmeric powder- a pinch
  • oil
Preparation Method :
  1. Soak the gram in water for atleast 2 hrs.
  2. Grind these to make a thick paste.
  3. Do not add water when grinding.
  4. Now add onion,curry leaves,green chilly,ginger,chilly powder,turmeric powder and salt to this paste and mix well.
  5. Wet your hands and make balls of the paste and make patties.
  6. Deep fry in oil.

Banana Coconut Milk Pachady

Tasty recipe with banana and coconut.

Ingredients :-
  • Banana pieces - 1/2 cup
  • Grated coconut - 11/2 cup
  • Onion cut into small - 1/2 cup
  • Green chillies - 2
  • Fenugreek - 1/8 th tsp
  • Lime Juice - 21/2 tsp
  • Salt   
To Season :
  • Sliced shallots - 1 dsp
  •  Mustard - 1/2 tsp
  • Pepper corns - 4
  • Cummin - a pinch
  • (Broken) dry chilliies - 2
  • Ghee - 1 dsp  
Preparation Method :
  1. Cut bananas (the frying variety) after peeling the skin, into small cubes.
  2. Wash well in water and fry them crisp in 2 ozs of oil and keep it aside.
  3. Add the minced ginger, cut up green chillies, the onions, salt and 1 cup of 2nd milk from the coconut.
  4. When it boils sprinkle the fenugreek and cook.
  5. Add about 3/4 cup of first milk and the lime juice, simmer and remove from fire.
  6. Fry all the ingredients of the seasoning in ghee and mix it into the pachady. 

Jeera Peas Pulav

Jeera Peas Pulav - Tasty Rice Dish made of Peas and Cumin (Jeera).

Ingredients :-
  • Basmathi Rice - 1 cup
  • Ghee - 1 spoon
  • Jeera - 1/2 tea spoon
  • Onion - 1
  • Ginger and Garlic paste - 1/2 spoon
  • Peas - 1/2 cup
  • Water - 2 cups
  • Salt - according to taste
Preparation Method :
  1. Take the basmathi rice and soak it water for about 20 minutes and later strain it and set aside.
  2. Take kadai/wok. Put little ghee fry jeera, ginger garlic paste, onion till onion is done.
  3. Now add the peas and fry for few minutes.
  4. Now put the basmathi rice. Mix every thing with required quantity of salt and add the water.
  5. Simmer it and close with lid and set aside for about 15 minutes.
  6. When done you would get the nice aroma. Serve it with Raita, or any gravy vegetable.
