Pazham Nirachathu

An Yummy Tandoori dish.

Ingredients :-
  1. Ripe bananas  2
  2. Powdered cardamom  2 pods
  3. Sugar 2 tablespoons
  4. Flour  2 tablespoons
  5. Eggs  2
  6. Raisins 1 tablespoon
  7. Cashew nuts (chopped) 2 tablespoons
  8. Water  For mixing
  9. Oil  For frying
  10. Salt To taste
Preparation Method :
  1. Beat the eggs with sugar, heat one table spoon ghee, add the egg and stir well to scrambled egg consistency. 
  2. Add cashew nuts, raisins and cardamom powder. Remove from the fire. 
  3. Peel the banana and slit into four without cutting ends. Stuff the banana with the scrambled eggs. 
  4. Make a paste with flour, salt and water. Apply the paste on the stuffing. 
  5. Heat the oil slowly and put the banana in it. Deep fry to a golden brown and remove.

Bread Oothappam

Yummy bread snack.

Ingredients :-
  • Bread slice - 8 nos
  • Semolina(Rava) - 50 gm
  • Green chilly - 1 no
  • Curd(Thayiru) - 100 gm
  • Ginger - 1" piece
  • Salt - ½ tsp
  • Coriander (finely chopped)- For flavor
  • Soda - A pinch
  • Onion(big) - 1 no
  • Oil - 4-5 tbsp
Preparation Method :
  1. Mix together rava, curd, salt, soda, green chillies, ginger and chopped coriander and keep aside for 2-3 hours. The paste should not be too liquid or too thick.
  2. Add the finely chopped onions to the rava paste.
  3. Heat a tava. Keep 1 slice of bread on the tava. Now spread the mixture on the slice. Simmer the gas and turn it over. Make it crisp by using oil on both sides.
  4. Repeat the above procedure for all the breads. Serve hot with tomato ketchup and coriander chutney.

Onion Uthappam

In the usual course we prepare so many varieties of dosas. But onion dosa is typically something special. Try this out!!

Ingredients :-
  • Idli Batter (2 cups)
  • Chopped Onions (4 medium size),
  • Minced Green Chilly (3-4 pcs),
  • Minced Ginger (1 inch size),
  • Oil
Preparation Method :
  1. Mix idli batter, chopped onion, minced chilly and minced ginger.
  2. Stir well.
  3. Spread 1 spoonful of it to a heated frying pan.
  4. When the base is golden brown, turn the side and cook well.

Pathiri

Delicious and simple recipe. It is a must dish for Ramadan.

Ingredients :-
  • Rice Flour  (Roasted) 500 g
  • Water  450-500 ml
  • Salt  to taste
Preparation Method :

Basic Dough
  • Bring water to a boil.
  • Add salt. Add the flour into the water and cook over a simmering flame.
  • Allow the mixture to cool.
  • Knead to a smooth dough, free of lumps.
Ari Pathiri
  1. Make 30 – 35 g balls from the basic dough.
  2. Roll out as thin as possible (1mm).
  3. Cut the pathiri using cutter into rounds of 5 inches diameter.
  4. Cook on a hot griddle with out changing the colour. Serve hot.
Vachchu Pathiri
  1. Make balls weighing 110-125 g from the basic dough.
  2. Roll out into pathiris of 5 inches diameter.
  3. Place between two banana leaves and cook on a medium hot griddle.
  4. Remove the banana leaf before serving.

Kunji Pathiri
  1. Make small pellets of 1 cm diameter from the basic dough.
  2. Press between the thumb and forefinger into small circles of 1.5 cm diameter.
  3. Steam for 3-4 minutes.
  4. Serve hot with fish or chicken curry.

Kumbilappam

A mouthwatering savoury snacks. Either of Banana leaves or vazhana Leaves can be used for preparing kumbilappam.

Ingredients :-
  • Jack fruit pulp - 1 cup
  • Roasted rice flour - 1 cup
  • Jaggery - 1 cup
  • Grated Coconut - 1 cup 
  • Cardamom powder - 1 tsp
  • Salt - a pinch
Preparation Method :
  1. Grate jaggery and mix with grated coconut in a grinder adding little water.
  2. Grind coarsely.
  3. Add rest of the ingredients, mix thoroughly. Keep for 10 minutes.
  4. The batter should be little more thicker than dosa batter.
  5. Use the leaves and steam the kumbilappam.

Plain Pattiri

Pattiri's are soft breads usually made with rice flour, wheat flour etc. They are made as itself and served with any non vegetarian Curry or stuffed with fish, meat etc. Its a specialty of Muslims. Here's a variety of delicious pattiri's you can try out.

Ingredients :-
  • Water -  1cup  
  • Salt -  to taste
  • Rice flour -  1cup (250ml)
  • Coconut -  1/2
Preparation Method :
  1. Heat water and salt in a vessel.
  2. When it boils, put the rice flour and make a hole in the centre.
  3. Close the vessel tightly with a lid, simmer the flame and keep it for 1 minute.
  4. Open the lid and with the tip of a spoon mix the flour.
  5. Remove the vessel from fire and allow the content to cool.
  6. Knead it to a fine dough without adding water.
  7. Take small balls from the dough and roll each of it into thin, round shapes by spreading rice flour over the balls.
  8. Heat a thick bottom flat pan.
  9. Cook the pattiri by turning both side till done.
  10. Don't use any oil while cooking. 
  11. Grate the coconut.
  12. Add some water and take thick milk from it. Soak the pattiri in this milk just before serving.

Kozhukatta

Ingredients :-
  • Rice Flour(Ari podi) - 1 cup
  • Water - 1 1/2 cups
  • Chilly powder - 1 tsp
  • Asafoetida(Kayam) powder- 2 pinches
  • Oil - 2 tsp
  • Mustard seeds - 1/2 tsp
  • Dry red chillies(Kollamulaku) - 2 nos
  • Curry leaves - 1 sprig
  • Salt - As reqd
Preparation Method :
  1. Boil water in a pan.
  2. Add chilly powder and asafoetida.
  3. Make a paste of rice flour and add to the boiling water stirring continuously to avoid lumps.
  4. Add salt to taste.
  5. Keep stirring, till it thickens. Alternatively, pour the boiling water into the flour and mix with spoon.
  6. Allow it to cool.
  7. Roll into small balls of the size of marbles. Apply a little oil on your hands while doing so.
  8. Steam the balls for 5 minutes.
  9. Allow it to cool.
  10. Heat oil in a pan.
  11. Add mustard seeds, red chillies and curry leaves.
  12. Add the rice balls and stir.  Serve hot.

Milk Appam

Ingredients :-
  • Milk - 1 lt
  • Sugar - 4 tbsp or as reqd
  • Allpurpose flour(Maida) - 1 cup
  • Cardamom(Elakka) - 4 nos
  • Oil for deep frying
Preparation Method :-
  1. Heat milk in heavy bottomed pan for 30 - 45 Minutes on a low flame, until it reduces to 300 ml.
  2. Let the milk cool for 10 minutes.
  3. Add maida, sugar and powdered cardamom and make a batter with dropping cosistency (like appam) without lumps.
  4. Heat oil in a pan.
  5. Take spoon full of batter and drop in hot oil.
  6. Deep fry, till golden brown in colour.
