Beans Thoran

Sumptuous Greens!

Ingredients :-
  • Beans - 1/2 kg
  • Onion (small) - 3
  • Coconut (grated) - 1 cup
  • Green chilli - 3
  • Mustard seed - 1 tsp
  • Garlic - 2 pods
  • Oil - 1 tbsp
  • Turmeric - 1/4 tsp
  • Curry leaves - 2 or 3 sprigs
  • Salt - to taste
Preparation Method :
  1. Cut Beans in to very small pieces using a grater.
  2. Grind coconut, turmeric, onion, green chilli together.
  3. Add one table spoon of oil in to a frying pan ( Cheena chatti in malayalam) and add mustard.
  4. When the mustard pops add urud dal .
  5. Then add Beans and mix well.
  6. Add ground coconut masala in to it and cover with the Beans .
  7. Add curry leaf and salt to taste.
  8. Keep the pan covered and cook in a low flame for 5 minutes.
  9. Stir well and serve hot.

Muringakka Thoran

A nice accompaniment for savoury lunches.

Ingredients :-
  • Drumstick (Muringakkai) - 12
  • shallots (chuvannuli) - ½ cup cut into small pieces
  • Green chilli - 3 cut fine
  • Coconut - ½ piece (grated)
  • Turmeric powder - ½ teaspoon
  • Jeera powder - One pinch
  • Oil - 2 table spoon
  • Mustard - ½ teaspoon
  • Curry leaves - One sprig
  • Salt to taste
Preparation Method :
  1. Cut drumstick lengthwise into 1 inch pieces.
  2. Cut it into small pieces.
  3. Mix it with green chilli,  shallots, grated coconut, jeera, turmeric, curry leaves and salt. Mix them well and keep it for 30 seconds.
  4. Heat oil in a separate pan, splutter mustard and put the mixture into it and mix with oil. Cover it with a lid and cook it using low flame for 6 minutes.
  5. When it is cooked stir well again  for 2 minutes and remove from the flame.

Cheera Thoran

An Yummy and Healthy vegetable side dish for Onam, Thiruvathira and Lunch.

Ingredients :-
  • Cheera/Spinach chopped fine - 5 cups
  • Grated coconut  - 2 1/2 cups 
  • Shallots chopped - 10 
  • Green chillies chopped - 5 
  • Garlic chopped  - 1/2 tsp 
  • Jeera powder - 1/2 tsp 
  • Turmeric powder - 1/2 tsp 
  • Mustard seeds - 1 tsp 
  • Curry leaves  - 2 sprigs 
  • Salt - to taste 
  • Coconut Oil   as needed
 Preparation Method :
  1. Grate coconut finely or beat in the food processor keep aside.
  2. Heat oil in a pan and add mustard seeds into it.
  3. Allow it to splutter, then add curry leaves, stir and add the shallots, turmeric powder, green chillies, jeera  and garlic.
  4. Saute for sometime. Add chopped spinach. Stir for a few minutes. Add salt, stir and cook until all the water evaporates and thoran becomes dry. Serve with rice.

Beetroot thoran

A colourful , yummy savoury dish!

Ingredients :-
  • ½ kg beetroot, finely chopped
  • ½ coconut, freshly grated
  • 7-8 curry leaves
  • 2 garlic cloves
  • ¼ tsp turmeric powder
  • ¼ tsp chilly powder
  • 2 tsp coconut oil
  • ½ tsp mustard seeds
  • 4 dried red chillies, broken
  • Salt
Preparation Method :
  1. Roughly grind together coconut, cumin seeds, curry leaves and garlic. This grinding is typically done using a stone mortar and pestle, but an electric mixer might also be used.
  2. Heat oil in a pan and add mustard seeds and broken red chilies.
  3. When the mustard splutters, add the vegetable.
  4. Sauté on high fire for the first minute, and then cook on low heat until done.
  5. Add turmeric and chili powder, mix and then add the ground coconut.
  6. Take off heat, mix lightly and cover and let sit for 5 minutes.
  7. Mix well and serve.

Ladys finger Thoran

Mouth watering vendakka thoran.

Ingredients :-
  • Lady’s finger   200 gm
  • Mustard seed  ½ teaspoon
  • Shallot   1 cup
  • Green chilly   5
  • Coconut oil   2 tablespoon
  • Grated coconut  ½ cup
  • Curry leaves  1 stem
  • Salt     As required
Preparation Method :
  1. Cut lady’s finger in small round pieces.
  2. To this add chopped shallots and chopped green chilly, grated coconut, salt and mix well.
  3. In a pan, heat oil and splutter mustard seed. 
  4. Add the mixed ingredients and sauté. 
  5. Close the pan and cook on a low flame

Ingredients:-
  • ½ kg cabbage, beans or beetroot, finely chopped
  • ½ coconut, freshly grated
  • 7-8 curry leaves
  • 2 garlic cloves
  • ¼ tsp turmeric powder
  • ¼ tsp chilly powder
  • 2 tsp coconut oil
  • ½ tsp mustard seeds
  • 4 dried red chillies, broken
